Tony's Profile ...

Tony left school at the age of 14 to begin his apprenticeship to be a Chef. In a career spanning almost 40 years, Tony has won many awards including Chef of the Year, represented Qld in Champion State of Australia and twice represented Australia at the Culinary Olympics in Germany, winning many Gold medals.

He started Carlyle's in 1985 with his wife Sheryl, with clientelle following him from the first 20 years of his career, the food speaking for itself. Over the years the awards accumulated & the regulars multiplied, friendships growing throughout the journey.


Specialty dishes were invented by the original celebrity chefs of the 80's that now feature on every restaurant menu ... Seafood stuffed mushrooms, crumbed & deep fried & served on a bed of rice with Hollandaise Sauce & a shake of Paprika.


This kitchen talent served his family well when camping throughout their lives, with the usual tins of baked beans replaced with starter plates filled with gourmet cheeses & meats, roasts cooked in the camp oven served with glasses of chilled wine & followed up with ice cream from the fridge!

Camping was almost always planned around a Four Wheel Drive competition or meeting, with the family roughing it from Victoria to North Queensland, with regular spots driving distance from Brisbane such as Emu Creek in Northern NSW & Landcruiser Park at Kilcoy.

 

Great Queensland Omlette

Tony's obsession with 4x4's grew, overtaking the garage & filling the rafters with giant tyres & springs. Eventually Tony began entering more serious competitions, taking his old Nissan GQ Patrol to Malaysia & tackling their jungles.

With the vehicle modifications running into 6 figures, Sheryl began to put her foot down that the funds should go into their Caravan kitty! Tony reluctantly parted with his GQ, replacing it with his current GU, also heavily modified to allow for tough conditions.

Tony has combined his career as a chef with his hobby of offroading & camping to design a comfortable & practical travelling solution to live in for an entire year.
